Product Description
Tofu skin, tofu skin, oil tofu skin and other soy products are commonly used by people. They are versatile for cold dishes, hot pot, stir frying, and soup making. High quality tofu skin is flexible, heat-resistant, and can absorb juice and taste well, while ordinary quality tofu skin often has a tight texture, a hard texture, and is not easy to taste, which is closely related to the drying process.
Many people wonder if the bubbling of tofu skin during drying is a processing defect? Actually, it's not at all. This is a normal physical reaction of microwave drying. Fresh wet tofu skin is densely packed with fibers and contains a large amount of moisture inside. Traditional drying involves heating from the outside in, with the surface layer first drying and hardening to lock in internal moisture, making the tofu skin texture easy to bake tightly.
Microwave drying, on the other hand, synchronously heats the inside and outside of the ingredients, causing the moisture inside the tofu skin to vaporize and expand rapidly in an instant. If the internal water vapor cannot slowly penetrate and be discharged, it will gently support the soybean skin fibers, forming a uniform bubbling state. This natural bulge is not caused by damage or deformation, but rather the process of evenly spreading the fibers of soy products.
It is precisely because of this foaming and puffing effect that the dried tofu skin will form a loose and porous three-dimensional structure, bidding farewell to the rigid and compact texture of traditional dried tofu skin. The intuitive advantage of this fluffy structure is its strong water absorption. When cooking, whether it's cold mixed sauce, hot pot soup base, or stir fried sauce, it can quickly enter the flavor and have a flexible taste.
From the perspective of production and food safety, microwave processing is clean and hygienic. While drying, it can also produce a sterilizing effect, effectively removing bacteria and microorganisms contaminated during the processing of soybean skins. At the same time, residual moisture inside is discharged, the moisture content is uniform and stable, and the problem of mold and deterioration in the later stage is eliminated. It can be stored for a long time and consumed with hygiene and peace of mind.
