Many people think that withering is an exclusive process for tea leaves, but in fact, for roses to be preserved for a long time and retain their aroma, withering is also necessary. This step is a key step in making rose tea and dried flower ingredients, and is indispensable.
Firstly, it must be clarified that roses must undergo withering. After picking fresh roses, the cells remain active and continue to breathe and oxidize. Not only are the petals prone to wilting and discoloration, but the essential oils and nutrients they contain are also quickly lost, and they are also prone to mold and deterioration. The core function of withering is to quickly destroy the oxidase activity in rose cells, terminate the physiological activity of cells, lock in the color, aroma, and nutrition of flowers, avoid petal browning, and remove some water on the surface of flowers, making subsequent drying smoother. Therefore, withering is the first step in deep processing of roses.
Compared to traditional steaming and stir frying methods, microwave withering has high efficiency, uniform effect, and simple operation. When processing, first sort the fresh roses, remove any remaining flowers, leaves, and impurities, and then evenly spread them on the conveyor belt of the microwave withering equipment. Be careful not to stack them too thick to ensure that the fresh flowers can fully contact the microwave. After starting the device, the microwave will quickly penetrate the rose petals and heat the cells from the inside. In just 1-2 minutes, the oxidase can lose its activity and complete the killing process. This method does not require stir frying over high heat, nor does it produce high-temperature burns to the petals. The temperature is controllable throughout the process, which can preserve the natural ingredients of the rose as much as possible, and there is no wastewater or exhaust gas, making it clean and environmentally friendly.
The state of the roses after finishing the shoot is significantly different from that of fresh flowers. Visually, the originally delicate and upright flowers will become slightly soft, the petals will no longer be tight, the color will be slightly darker than when fresh, and there will be no damage or burnt edges. In terms of odor, the pungent floral scent has disappeared, replaced by a rich and mellow rose fragrance, and the original astringency has faded away. In terms of moisture, removing some moisture during the withering process makes the petals softer and less dry and brittle, making them suitable for subsequent processing.
