Traditional air drying and hot air drying of dried insects commonly suffer from problems such as blackening, withering, and dull color, resulting in uneven appearance. The dried insects processed by microwave drying technology have a golden and transparent body, a full and complete body shape, and stable quality. Why is that?
Firstly, traditional drying involves heat conduction heating from the outside to the inside, resulting in temperature differences between the inside and outside. During processing, the heat generated by the equipment first heats the surface of the insect body, and then slowly penetrates into the interior. In order to dry the residual moisture in the insect core, it must be heated for a long time. Long term high temperature environment can cause the proteins and unsaturated fatty acids in the insect body to continuously oxidize and brown, deepen pigment deposition, and ultimately lead to the insect body turning black and dark. At the same time, the epidermis will first lose water and harden, shrink and crust, locking in internal water vapor that cannot be expelled. This not only causes the insect body to dry and collapse, the epidermis to crack, but also easily leads to external dryness and internal wetness.
Microwave drying subverts the traditional heating mode and adopts a penetrating internal and external synchronous heating. Microwave high-frequency electromagnetic waves can directly penetrate the surface of the insect and act on the internal water molecules, causing high-frequency vibration and friction of the water and autonomous heat generation, achieving synchronized dehydration of the insect's surface at the same temperature.
