Drying is the key process that determines the phase and quality of the finished product. Many processing plants will find that compared with conventional low-temperature drying, the yellow mealworms dried by microwave drying are less prone to drying and shrinking, have a full and symmetrical shape, a natural golden color, and a high grade of finished products. This is actually due to the difference in heating methods.
Ordinary low-temperature drying belongs to conduction heating from the outside to the inside. Heat first seeps into the interior from the surface of the insect, causing a significant loss of surface moisture. The insect's skin quickly loses water and hardens, forming a dry and hard outer shell. After the shell is tightened, it is difficult for the internal water vapor to be discharged outward, and the dehydration rhythm inside and outside is not consistent, which can easily cause the insect body to shrink, collapse, dry and flattened. Long term slow baking can also lead to local oxidation, darkening and browning of the color, and uneven color.
Microwave heating follows a different logic: it relies on water molecules inside the insect body to absorb microwave energy, synchronously heating up the whole body and dehydrating both inside and outside. The temperature is evenly heated, and the epidermis will not dry out and lock in water in advance. The water in the body can smoothly and continuously escape outward, and the insect tissue will not be squeezed or collapsed due to the rapid contraction of the surface layer. After drying, it still maintains a round and full shape, and will not shrink or break.
Secondly, there is the advantage of color. The low-temperature drying cycle is long, and the protein and oil in the yellow mealworms are exposed to air for a long time, resulting in high oxidation and dark and grayish colors. Microwave drying has a fast speed, greatly shortens the dehydration cycle, inhibits oxidation reactions, and can lock in its natural golden color. At the same time, the mild and controllable thermal effect will produce a moderate Maillard reaction, making the color bright and uniform, without local blackening or whitening, and stable appearance.
Of course, it is not an unconditional achievement of good quality. The thickness of raw material paving, microwave power, and conveying speed all need to be matched and adjusted. If the parameters are out of balance, oil discharge and darker colors may also occur. But under appropriate technology, microwave drying solves the pain point of traditional low-temperature drying of "drying the skin first, then the core", taking into account shape, color, nutrition, and hygiene. Whether used as a feed raw material or made into pet snacks, the quality advantage is outstanding.
