Faba beans are a popular snack, so what are the differences between frying and microwave baking as two different processing methods that meet different market demands?
From the processing method, fried fava beans use high-temperature oil as the heat transfer medium. After pretreatment, fava beans are immersed in hot oil and rely on the oil to continuously transfer heat, gradually maturing from the outside to the inside. The process includes frying, oiling, seasoning, and the production process has a lot of oil fumes. The oil products need to be replaced regularly, and the production cost and environmental control requirements are high.
Microwave baking belongs to dry physical processing and does not require the addition of grease. By utilizing the microwave penetration characteristic, water molecules inside the broad bean oscillate and generate heat through friction, and the broad bean is matured by synchronously heating both inside and outside. The entire process does not require oil and can be continuously produced on an assembly line. The processing environment is clean, without oil fume pollution, and the process is simple. It can also achieve simultaneous sterilization treatment.
In terms of finished product quality, fried fava beans have a high oil content, and long-term storage can easily lead to oil oxidation and spoilage, shortening the shelf life. Microwave baking of fava beans does not require additional oil addition, preserving the nutrients of fava beans themselves. Oil is only a component of the raw material itself, which is not easily oxidized or spoiled, but is more prone to water absorption and moisture absorption, requiring higher packaging requirements. Moreover, microwave processing does not require flipping throughout the entire process, resulting in a low breakage rate of fava beans and good particle integrity.
The difference in taste characteristics between the two is significant. Fried fava beans are fluffy and crispy, with a rich and fragrant taste upon entry. Microwave baked fava beans have a dry and crispy taste, not greasy, but have a hard texture, retaining more of the original bean aroma of fava beans.
